Coriander & Chicken

Just the smell of coriander is enough to make me hungry – it is quite fragrant when it is fresh. Two things I really like that goes well together is coriander and chicken which I start off together in a big pot (actually I start off by putting some rice to boil). I then add the carrots and mushrooms saving the spinach for when the dish is almost done. The mushrooms give off a lot of fluid and when you add the rice there will be some more as well and it almost looks like a soup. But it will very quickly reduce into a kind of risotto and you gotta be quick and add some cream, milk or water depending on your taste to avoid it getting too dry.

Besides the fresh coriander the spices are salt, pepper and a bit of thyme (sorry but I forgot a pic of the final result – I was hungry you know).

    Is that thyme? Isn’t it basil next to the coriander?

    • The thyme is not in the picture. The “basil” is the spinach.
